Roasted Carrots with Maple, Garlic & Herbs

Ingredients

  • 2 pounds carrots, peeled and cut into sticks (or left whole if young and slender)

  • 2 tablespoons olive oil

  • 1 tablespoon pure maple syrup

  • 2 garlic cloves, minced

  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

  • ½ teaspoon ground cumin (optional, for warmth)

  • Salt and black pepper, to taste

  • Fresh parsley, dill, or chives, for garnish


Instructions

  1. Preheat oven: 400°F (200°C). Line a baking sheet with parchment.

  2. Season carrots: Toss carrots with olive oil, maple syrup, garlic, thyme, cumin (if using), salt, and pepper until evenly coated.

  3. Roast: Spread in a single layer and roast 25–30 minutes, stirring once, until tender and caramelized at the edges.

  4. Finish: Garnish with fresh herbs before serving.
