peach, tomato & sweet corn salad

Is it just me, or has this month been 354 days long? I’m not one to wish summer away, but this year I’m very ready to see August in the review mirror. Call me a basic fall girlie but I don’t care, give me ALL the cozy sweaters and pumpkin spiced lattes and Friday nights on the couch watching the Great British Baking Show (which apparently is back next Friday!!!?).

We did have some seriously glorious early fall weather this week, and the cooler temps were perfect for getting our fall seedlings in the ground. I don’t have the capacity to do a fall CSA this season, but we’re still planting a good amount of fall veggies so we can sell some occasional veggie boxes, supply local restaurants, and so we can have fresh veg for our family + friends to enjoy. We already have carrots, radishes, turnips, arugula, lettuce, etc growing nicely, and this week we transplanted a bunch of asian greens, broccoli, collards, cabbage, fennel, and kohlrabi seedlings.

It had been a hot minute since we’d planted anything new, and it felt so darn good to get our hands back in the dirt (especially without it being one million degrees out).

This recipe is my official swan song to summer, and can I just say? This one’s a banger.

This salad is not a wallflower, she is not demure. She is loud, bold, colorful, and filled with the very best that summer has to offer. Ripe peaches! Sweet corn! Cherry tomatoes! Avocado! Pistachios! Salty cheese! Basil! Lime! It’s truly an epic combo.

Like most of my recipes, this one is very adaptable, so feel free to swap out different veggies/fruits/nuts/cheese based on what you have available. It all comes together in under 20 minutes, and it would be the perfect dish to bring to a Labor Day picnic.
