Rustic Grape Tart with Almond Crust
Ingredients
For the crust:
1 ½ cups all-purpose flour (or whole wheat pastry flour)
½ cup almond flour
2 tablespoons sugar
½ teaspoon salt
½ cup vegan butter or coconut oil, chilled and cubed
4–6 tablespoons ice water
For the filling:
3 cups seedless grapes (concord work beautifully)
2 tablespoons sugar (or maple syrup)
1 tablespoon cornstarch
½ teaspoon cinnamon
1 teaspoon lemon juice
1 teaspoon lemon zest
Optional garnish: powdered sugar, vegan vanilla ice cream, or coconut whipped cream
Instructions
Make the crust:
In a bowl, whisk flours, sugar, and salt.
Cut in plant-based butter until crumbly.
Add ice water gradually until dough comes together.
Wrap and chill 30 minutes.
Prepare grapes:
In a bowl, toss grapes with sugar, cornstarch, cinnamon, lemon juice, and zest.
Assemble:
Preheat oven to 375°F (190°C).
Roll dough into a rustic circle, about 12 inches wide.
Place grapes in the center, leaving 2-inch border.
Fold edges over the fruit, pleating as you go.
Bake:
Bake 35–40 minutes, until crust is golden and grapes are bubbling.
Cool slightly before serving.
Serve:
Dust with powdered sugar and top with vegan ice cream or whipped cream if desired.
