saucy peanut cabbage & carrot bowls
If you’ve been following along for a while, you may know that our almost 2-year old daughter Hudson has severe food allergies, and she is allergic to both peanuts and wheat. It’s been a journey, but I’m thrilled to report that Hudson is doing amazing and receiving incredible care with the team at Allergy Partners in Chapel Hill.
For the past 10 months, she’s taken part in a form of immunotherapy called SLIT (sublingual immunotherapy), where she takes few drops on her tongue every day containing a micro-dose of both peanut and wheat, helping her immune system to become less sensitive to these foods over time. Because of the severity of her allergy to wheat, Hudson also receives a monthly shot of a medicine called Xolair, which essentially blocks her immune system from going into anaphylaxis if she had an accidental allergen exposure.
This week, under close observation by her doctors, Hudson took part in a peanut “challenge” where she ate small amounts of peanut over the course of two hours, followed by an hour of waiting for any delayed reactions. Hudson did amazing and she “passed” with flying colors! Which is a great sign that the therapies are working, and she’s now able to eat slightly increased amounts of peanut a few times a week, to continue building her tolerance. We’re not sure if she will ever outgrow her allergy (unfortunately, only 20% of kids outgrow a peanut allergy), but I’m sleeping much easier knowing that her body is becoming less and less reactive.
I’m telling you all this because a) navigating Hudson’s allergies is a big part of our life, and I want to share important updates with y’all, and b) the good news of Hudson passing her peanut challenge this week inspired me to create a new recipe for saucy peanut cabbage & carrot bowls. To be very clear, Hudson is definitely NOT able to eat this dish yet, but maybe someday she can!
